La vigne

The vine is a plant which thirsts for water and sunlight. The paradox is that it produces its best fruit when grown in dry, impoverished soil. The deeper its roots penetrate, the more the vine is impregnated by the soil. Its close-grained fruit is thus able to concentrate a treasury of aromas which the wine will later amply express. It is not a matter of chance that the greatest vintages of Burgundy are grown on well exposed and well drained hillsides.
