Each pollinated flower becomes a grape, increasing in volume in the space of about six weeks. This is accompanied by a slight increase in acidity. The grape skin changes colour from green to purplish red in August, announcing the start of the ripening process proper. The sugar content increases for about seven weeks, reaching its maximum 100 days after the vine has blossomed, and the grape harvest can then begin.
