The rule has it that wine reaches maturity 100 days after the vine has blossomed. However, faced with frequently capricious weather conditions, there is no substitute for experience and careful observation for deciding with certainty the best day to start the harvest.
In the Prieuré Roch vineyards, the grape harvest extends over an average of about ten days. Harvesting by hand enables us to select the bunches and avoid crushing the grapes at too early a stage. This is the token of a great wine.
